Highland Cows are just so awesome that I couldn't help but draw one! They remind me of quiet little countryside towns across Europe (my dream vacation!). I think that is why I am so drawn to them. Someday I will enjoy those views in person!
As a minimalist at heart I intentionally leave the background white to create a more simple feeling, while still drawing with great detail.
